  • 2 cloves garlic
  • 150 g cherry tomatoes
  • 30 g sun-dried tomatoes
  • 50 g baby spinach
  • Juice of one organic lemon
  • 500 ml vegetable broth
  • 100 ml cream
  • 250 g orzo pasta
  • 30 g grated Parmesan

Instructions

  1. Cut the chicken breast fillets into bite-sized pieces. Season with salt, pepper, oregano, basil, rosemary, and paprika. This ensures an intense flavor. (Duration: 5 minutes)
  2. Heat 1 tablespoon of oil in a large skillet over medium heat. Sear the chicken pieces until golden brown all over (about 6-8 minutes). Remove them from the skillet and set aside. Be careful not to leave the chicken in the pan too long to avoid drying it out.
  3. Finely dice the shallot and chop the garlic. Add the remaining oil to the same skillet and sauté the shallot and garlic over low heat until translucent (about 2-3 minutes), stirring regularly to prevent burning.
  4. Add the cherry tomatoes and let them roast for about 3 minutes until they are slightly burst and release their juices.
  5. Pour in the vegetable broth and cream, bringing the mixture to a boil. Stir well and let it simmer for 2 minutes until the sauce thickens slightly.
  6. Add the orzo pasta and the seared chicken back into the skillet. Stir everything well and let it simmer over medium heat for 10 to 15 minutes until the pasta is al dente and the liquid has thickened into a creamy consistency. Stir occasionally to prevent sticking.
  7. Chop the sun-dried tomatoes and wash the spinach. Add both to the skillet and stir until the spinach wilts (about 2 minutes).
