Creamy Pasta Dreams with Crème Fraîche

  • 300 g pasta (e.g. penne, spaghetti or fusilli)
  • 200 g Crème Fraîche
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1 garlic clove, finely chopped
  • 100 g Parmesan, freshly grated
  • 1 teaspoon lemon juice (optional)
  • 1 tablespoon fresh parsley or basil, chopped
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)

Instructions

  1. Bring a large pot of water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente (about 8-10 minutes), stirring occasionally to prevent sticking.
  2. In a pan, heat the olive oil over medium heat. Add the finely diced onion and sauté for about 5 minutes until soft and translucent, being careful not to burn it.
  3. Add the chopped garlic and sauté for 1-2 minutes until fragrant, ensuring the garlic does not burn as it will become bitter.
  4. Reduce the heat and stir in the Crème Fraîche. Allow it to warm over low heat for about 2-3 minutes until it simmers lightly.
  5. Once the pasta is al dente, drain it in a colander, reserving a cup of the pasta water for later use.
  6. Add the drained pasta to the pan with the Crème Fraîche. Stir well to coat the pasta evenly with the sauce. If the sauce is too thick, add some of the reserved pasta water as needed.
  7. Season the mixture with salt, pepper, lemon juice, and nutmeg. Stir in the freshly grated Parmesan until melted and the sauce becomes creamier.
  8. Remove the pan from the heat and serve the pasta immediately. Garnish the dish with freshly chopped parsley or basil and enjoy warm.
