Ingredients

Scale
  • 400 g macaroni
  • 3 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 2 garlic cloves, chopped
  • 500 ml vegetable broth
  • 200 ml cream
  • 200 g Gruyère or Emmental, grated
  • Salt and pepper to taste
  • Fresh thyme for garnish
  • 100 g Parmesan, grated
  • 50 g breadcrumbs
  • 1 tsp butter, melted

Instructions

  1. Preheat the oven to 180 °C (350 °F). This is important for even browning of the crust when baking the dish.
  2. Heat the butter and olive oil in a large pan over medium heat. Add the onions and sugar, and caramelize them for 15-20 minutes over low heat, stirring occasionally until they are golden brown.
  3. Add the chopped garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn it, as this will make it taste bitter.
  4. Pour the vegetable broth into the pan and let everything simmer for 5 minutes until the broth is slightly reduced.
  5. Stir in the cream and season with salt and pepper. Bring the mixture to a boil, then remove from heat.
  6. Cook the macaroni in a large pot of salted boiling water until al dente, according to package instructions, usually about 8-10 minutes.
  7. Drain the macaroni and let it drain well. Then add it to the onion-cream mixture in the pan and stir in half of the Gruyère.
  8. Transfer the mixture to a baking dish. Sprinkle the remaining Gruyère on top for a nice, melting cheese layer.
  9. Mix the Parmesan and breadcrumbs with the melted butter and sprinkle this mixture over the dish for a crispy crust.
  10. Bake the macaroni in the preheated oven for 15-20 minutes until the top is golden brown and crispy.
  11. After baking, you can sprinkle the dish with fresh thyme and serve hot. Let it rest briefly to allow the flavors to meld.
