- 3 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 2 garlic cloves, chopped
- 500 ml vegetable broth
- 200 ml cream
- 200 g Gruyère or Emmental, grated
- Salt and pepper to taste
- Fresh thyme for garnish
- 100 g Parmesan, grated
- 50 g breadcrumbs
- 1 tsp butter, melted
- Preheat the oven to 180 °C (350 °F). This is important for even browning of the crust when baking the dish.
- Heat the butter and olive oil in a large pan over medium heat. Add the onions and sugar, and caramelize them for 15-20 minutes over low heat, stirring occasionally until they are golden brown.
- Add the chopped garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn it, as this will make it taste bitter.
- Pour the vegetable broth into the pan and let everything simmer for 5 minutes until the broth is slightly reduced.
- Stir in the cream and season with salt and pepper. Bring the mixture to a boil, then remove from heat.
- Cook the macaroni in a large pot of salted boiling water until al dente, according to package instructions, usually about 8-10 minutes.
- Drain the macaroni and let it drain well. Then add it to the onion-cream mixture in the pan and stir in half of the Gruyère.
- Transfer the mixture to a baking dish. Sprinkle the remaining Gruyère on top for a nice, melting cheese layer.
- Mix the Parmesan and breadcrumbs with the melted butter and sprinkle this mixture over the dish for a crispy crust.
- Bake the macaroni in the preheated oven for 15-20 minutes until the top is golden brown and crispy.
