Ingredients

Scale
  • 1/2 red cabbage
  • 1/2 cucumber
  • 2 bell peppers
  • 3 tablespoons pomegranate seeds
  • approximately 50 g fresh flat-leaf parsley
  • 10 mint leaves
  • 1 apple
  • Juice of 2 oranges
  • 30 ml olive oil
  • 2 tablespoons maple syrup
  • Salt & pepper

Instructions

  1. Prepare the red cabbage: Halve the red cabbage and cut it into quarters. Slice the quarters into fine strips and then chop them into small cubes. This should take about 5 minutes. Make sure to cut evenly for a uniform texture.
  2. Cut the vegetables and fruit: Also dice the cucumber, bell peppers, and apple into fine cubes. Allow about 5 minutes for this step. Be sure to remove the seeds from the apple before cutting.
  3. Prepare the herbs: Finely chop the parsley and mint leaves. This step should take about 2 minutes. Fresh herbs significantly enhance the flavor of the salad.
  4. Combine all ingredients: Place the chopped red cabbage, cucumber, bell peppers, apple, and chopped herbs into a large bowl. Sprinkle the pomegranate seeds on top. Take a moment to admire the colors and textures – this should take about 2 minutes.
  5. Prepare the dressing: In a small jar, mix the juice of 2 oranges, olive oil, and maple syrup. Season with salt and pepper. Stir the ingredients well until they are well emulsified. This takes about 2 minutes.
  6. Add the dressing: Pour the dressing over the salad and mix everything thoroughly. Ensure every bite is well seasoned. Let the salad sit for about 5 minutes to allow the flavors to meld.
  7. Serve: Serve the salad fresh and enjoy. It is perfect as a side dish or a light main course. The colors and flavors will delight you!
