  • 4 slices thick-cut beef bacon

  • 2 tablespoons unsalted butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F). This ensures the potatoes bake evenly and get a crispy skin.
  2. Wash the potatoes thoroughly and poke them several times with a fork. This prevents them from bursting during baking. Place them on a baking sheet.
  3. Bake the potatoes for about 45-60 minutes, until they are soft. You can test this by poking them with a knife; if it slides in easily, they are done.
  4. While the potatoes are baking, fry the beef bacon in a pan over medium heat for 8-10 minutes until crispy. Be sure to turn it regularly to prevent burning.
  5. Once the bacon is done, remove it from the pan and let it drain on a paper towel to remove excess fat. Break it into small pieces.
  6. When the potatoes are done, take them out of the oven and let them cool slightly. Then cut the top off each potato and gently squeeze the sides to expose the inside.
