One Pot Healthy Broccoli Mac And Cheese

This One Pot Healthy Broccoli Mac And Cheese is a creamy, comforting dish that combines the richness of cheddar cheese with the freshness of broccoli. It’s an easy and nutritious meal perfect for busy weeknights.

Ingredients

Scale
  • 2 cups whole milk
  • 1 + 1/2 cups water or broth
  • 8 oz pasta of choice
  • 810 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup unsweetened Greek yogurt
  • 1 tablespoon butter or ghee (optional)

Instructions

  1. Begin by adding 2 cups of whole milk and 1 + 1/2 cups of water or broth to a large pot. Heat the mixture over medium heat until it starts to boil, stirring regularly to prevent the milk from burning.
  2. Once the mixture is boiling, add 8 oz of your preferred pasta. Reduce the heat to low and let the pasta simmer for 10 minutes, stirring occasionally to prevent sticking.
  3. After 10 minutes, when the pasta is almost cooked, add 8-10 oz of finely chopped broccoli. Cook the mixture for another 2-3 minutes until the broccoli is tender but still crisp and the pasta is al dente.
  4. Remove the pot from heat and stir in 2 cups of shredded extra sharp cheddar cheese, 1/4 cup of Greek yogurt, and 1 tablespoon of butter or ghee (if using). Stir vigorously until the cheese is fully melted and the sauce is creamy, ensuring there are no lumps.
  5. Serve the dish immediately while it's still hot. You can garnish it with fresh pepper or some extra cheese to enhance the flavor.

Nutrition

Keywords: Avoid overcooking the pasta; it should be al dente as it will continue to cook in the sauce. For a creamier sauce, you can increase the amount of yogurt or add a splash of cream, adjusting the broth accordingly.
