- 2 sheets of puff pastry, fresh, refrigerated
- 4 stale rolls
- 1 medium egg
- 4 medium egg yolks
- 900 g pumpkin
- 0.5 tsp poppy seeds
- 2 yellow bell peppers
- a splash of vegetable oil
- a splash of water
- 2 onions
- Halve the pumpkin and remove the seeds and fibers with a spoon. Cut the pumpkin into wedges, wash them, pat them dry, and dice the flesh. (approx. 10 minutes)
- Peel the onions, halve them, and chop them finely. Wash the bell peppers, halve them, remove the cores, and cut the pods into fine cubes. (approx. 5 minutes)
- Preheat the oven to 220 °C (428 °F) and line a baking sheet with parchment paper. (approx. 5 minutes)
- Heat a splash of vegetable oil in a large pan. Sauté the onion and pumpkin cubes for about 5 minutes until they are lightly golden brown. (Stir occasionally to avoid burning.)
- Add a splash of water to the pan and let the pumpkin simmer on low heat for about 30 minutes until soft. (Stir occasionally to prevent burning.)
- Meanwhile, soak the rolls in a bowl of water and squeeze them out well. Tear the rolls roughly and mix them in a bowl with the egg yolks and the bell pepper cubes. (approx. 10 minutes)
- Once the pumpkin is soft, mix the pumpkin flesh into the roll-pepper mixture. (approx. 5 minutes)
- Roll out the puff pastry and spread half of the pumpkin-pepper mixture on each. Roll the dough from one long side and tuck in the ends. (approx. 5 minutes)
- Place the pumpkin strudels on the baking sheet. Beat the egg and brush it over the strudels. Sprinkle with poppy seeds. (approx. 5 minutes)
- Bake the pumpkin strudels in the preheated oven on the middle rack for about 35 minutes until golden brown. (Watch the strudel to ensure it doesn't get too dark.)
- Remove the strudels from the oven, let them cool slightly, cut them into portions, and serve immediately. (approx. 5 minutes)
