  • 1 kg chicken parts (breast and thighs)
  • 2 liters chicken broth
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 3 garlic cloves, chopped
  • 1 piece fresh ginger, grated
  • 2 tsp turmeric
  • 1 tsp cumin
  • 1 tsp pepper
  • 2 tbsp olive oil
  • Juice and zest of one lemon
  • Fresh parsley for garnish

Instructions

  1. Wash the vegetables thoroughly under running water and cut them as specified: chop the onions, slice the carrots, and dice the celery. Also finely chop or grate the garlic and ginger.
  2. Heat the olive oil in a large pot over medium heat. Ensure the oil is hot enough before adding the chicken.
  3. Add the chicken parts to the pot and brown them on all sides. Make sure not to overcrowd the chicken to allow even cooking.
  4. Remove the chicken parts from the pot and set them aside. Add the prepared onions, carrots, celery, and garlic to the same pot. Sauté the vegetables until they are soft and lightly browned.
  5. Add the grated ginger, turmeric, and cumin, and briefly toast the spices until fragrant, being careful not to burn them.
  6. Pour the chicken broth into the pot and bring everything to a boil, ensuring the heat is not too high to prevent the broth from bubbling.
  7. Return the browned chicken parts to the pot, season the soup with pepper and salt to taste, and reduce the heat to low. Let the soup simmer for 30-40 minutes until the chicken is tender, stirring occasionally.
  8. Remove the chicken parts from the soup, shred the meat, and return it to the soup. Add the lemon juice and zest to brighten the flavor, and garnish with fresh parsley. Serve the soup hot.
