Delicious Baked Gnocchi with Tomatoes, Spinach, and Mozzarella

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 can (28 ounces or 800 grams) canned diced tomatoes, preferably with herbs
  • 5 cups fresh spinach, roughly chopped (or 10 ounces frozen, thawed and drained)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ¼ cup fresh basil, chopped (or 1 tablespoon dried basil)
  • 2 cups (about 8 ounces) mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated (for topping)

Instructions

  1. Preheat your oven to 190 °C (375 °F) while you prepare the remaining ingredients.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until soft and translucent.
  3. Add the minced garlic and sauté for another minute until fragrant, being careful not to burn it.
  4. Add the can of diced tomatoes to the skillet and stir well. Let the mixture simmer for 5-7 minutes to combine the flavors, stirring occasionally to prevent sticking.
  5. Add the fresh spinach to the skillet and let it wilt for 2-3 minutes. If using frozen spinach, make sure to squeeze out excess moisture before adding.
  6. Sprinkle in the Italian seasoning, red pepper flakes (if using), salt, and pepper, and stir everything together.
  7. Add the gnocchi and mix thoroughly to ensure the gnocchi are evenly coated with the sauce.
  8. Transfer the mixture to a large casserole dish and spread it evenly. Sprinkle the shredded mozzarella evenly over the top.
  9. Top the mixture with grated parmesan and bake the casserole for 25-30 minutes until the cheese is golden brown and bubbly.
  10. After baking, let the casserole rest for about 5-10 minutes before serving to allow the heat to settle and flavors to intensify.
