- 500 g potatoes (peeled and diced)
- 300 g Leberkäse (cut into cubes)
- 2 tablespoons oil (for frying)
- 1 onion (finely chopped)
- 2 eggs (optional, for extra creaminess)
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley (for garnish)
- Peel the potatoes and cut them into small cubes. In a large pot, boil the potatoes in lightly salted water for 10 minutes until just soft. Drain and set aside.
- Heat the oil in a large skillet. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the pre-cooked potato cubes to the skillet and fry for 5-7 minutes, stirring occasionally, until they are evenly browned and crispy.
- Add the diced Leberkäse and fry for another 5 minutes until lightly browned. Stir everything well to combine the flavors.
- If desired, crack the eggs over the potato-Leberkäse mixture and stir until they set, about 2 minutes. Be careful not to set the heat too high to avoid drying out the eggs.
- Season with salt and pepper to taste and stir well. Remove the skillet from heat and garnish with fresh parsley. Serve the dish hot.

Keywords: Avoid overcooking the potatoes to prevent them from becoming too soft. Use a non-stick skillet or a well-seasoned cast iron pan to prevent sticking. You can also add bell peppers or mushrooms for extra flavor and texture.
