- 100g Ham
- 100–150g Parmesan
- 2 Egg Yolks
- Pinch of Salt
- Pinch of Pepper
- 1 tsp Oil
- 1 Ladle of Pasta Water
- Bring a large pot of salted water to a boil (about 5-7 minutes). Make sure the water is boiling vigorously before adding the pasta.
- While the water is boiling, cut the ham into small cubes (about 1 cm). This takes about 2 minutes.
- Grate the Parmesan into a bowl. This should take about 3 minutes, depending on your grating technique.
- Separate the egg whites from the yolks. This takes about 2 minutes. Make sure no egg whites get into the bowl with the yolks.
- Once the water is boiling, add the pasta and cook according to the package instructions until al dente (usually 8-10 minutes). Stir occasionally.
- Meanwhile, heat 1 tsp of oil in a non-stick pan over medium heat (about 1-2 minutes). Be careful not to let the oil smoke.
- Add the ham cubes to the pan and lightly fry until golden brown (about 3-4 minutes). Stir regularly to avoid burning.
- When the pasta is done, drain it in a colander, reserving 1 ladle of the pasta water. This takes about 1 minute.
- Add the drained pasta to the pan with the ham cubes and mix everything well (about 1-2 minutes).
- In a separate bowl, mix the grated Parmesan, egg yolks, and some of the pasta water (about 1-2 minutes) until a creamy sauce forms.
- Pour the Parmesan-egg mixture over the pasta and stir everything well (about 2-3 minutes) to evenly distribute the sauce. Be careful not to have the heat too high to avoid scrambling the eggs.
- Let the pasta rest for 2-3 minutes. Then season with salt and pepper to taste and serve on a plate (about 1 minute).
