  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (about 110°F/43°C)
  • 2 tablespoons olive oil
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 egg (for egg wash)
  • 1 tablespoon water

Instructions

  1. In a large bowl, combine the warm water with the dry yeast and sugar. Let the mixture sit for about 5-10 minutes until it becomes frothy, indicating that the yeast is active.
  2. In a separate bowl, mix the flour, salt, and olive oil. After the yeast has foamed, add the yeast mixture and combine everything until a dough forms.
  3. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Ensure the dough is not too sticky; add more flour if necessary.
  4. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  5. Meanwhile, prepare the filling: heat olive oil in a pan and sauté the onion and garlic over medium heat for 5 minutes until soft.
  6. Add the spinach and cook for another 2-3 minutes until wilted. Stir in the feta, oregano, salt, and pepper, and let it cool slightly.
  7. Once the dough has risen, roll it out on a floured surface and cut it into rectangles. Evenly distribute the spinach-feta mixture on top.
  8. Fold the rectangles in half and pinch the edges to seal. Twist the folded dough pieces into spirals and place them on a baking sheet lined with parchment paper.
  9. Brush the twists with a mixture of egg and water and let them rise for another 15-20 minutes until slightly puffed.
  10. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes until golden brown. Allow to cool for a few minutes before serving.
