- 1 can corn
- 1 tsp sweet paprika
- 1/2 tsp smoked paprika
- 1 tsp ground cumin
- 2 tsp fresh lime juice
- 2 green onions
- 1 handful fresh cilantro

- 250 g guacamole
- 250 g salsa
- 180 g vegan sour cream or crème fraîche
- 250 g romaine lettuce, sliced and washed
- 600 g cooked whole grain rice (300 g uncooked rice, as rice doubles in weight when cooked)
- 7 large tortilla wraps
- Drain the black beans and corn in a sieve and rinse thoroughly with water for about 1-2 minutes to remove excess salt and preservatives.
- Transfer the beans and corn to a medium bowl. Add the sweet paprika, smoked paprika, cumin, lime juice, salt, and pepper. Mix well until the spices are evenly distributed, which should take about 2-3 minutes.
- Slice the green onions into fine rings and roughly chop the cilantro. Add both to the bowl with the bean-corn mixture and gently fold to combine the flavors. This step should take about 1-2 minutes.
- Take a tortilla wrap and lay it flat on a plate. Add a generous portion of the cooked whole grain rice in the center of the wrap. This step should be done quickly as the rice should be served warm.
