Ingredients

Scale
  • 1.5 cups Basmati rice
  • 3 cups water
  • 1 tablespoon salt
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 1 tablespoon sweet paprika
  • 1 tablespoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 400 g turkey fillet
  • 3 tablespoons gyros spice mix
  • 2 tablespoons olive oil
  • 1 onion
  • 1 red bell pepper
  • 200 g mushrooms
  • 100 g tomato paste
  • 300 ml chicken or beef broth
  • 200 g sour cream
  • 25 ml Metaxa
  • 1 tablespoon cornstarch
  • a little salt and pepper
  • 1 sprig parsley

Instructions

  1. Start by preparing the rice: Bring 3 cups of water to a boil in a pot. Add 1 tablespoon of salt and 1.5 cups of Basmati rice. Reduce the heat and let the rice simmer for about 15 minutes until the water is fully absorbed.
  2. While the rice is cooking, cut the turkey fillet into thin strips to ensure it cooks quickly and absorbs the spices well.
  3. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add the turkey strips to the pan and fry them, stirring frequently, for 5-6 minutes until golden brown, ensuring the meat cooks evenly.
  5. Add the bell pepper and mushrooms, and sauté everything together for another 4-5 minutes until the vegetables are soft.
  6. Stir in the tomato paste, chicken or beef broth, and the spices (thyme, rosemary, paprika, oregano, black pepper, and garlic powder). Mix everything well and let it simmer for about 5 minutes until the sauce thickens slightly.
  7. In a small bowl, mix 200 g of sour cream with 25 ml of Metaxa and 1 tablespoon of cornstarch. Add this mixture to the pan and stir well to create a creamy sauce. Let it simmer for 2-3 minutes until the sauce is nice and thick.
  8. Season the sauce with a little salt and pepper. Serve the gyros on a bed of fluffy rice and garnish with fresh parsley.
