  • 3 medium bell peppers (1 red, 1 yellow, 1 green), sliced into strips
  • 1 large onion, sliced into wedges
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (optional, adjust based on heat preference)
  • Salt and black pepper, to taste
  • 1 tablespoon balsamic vinegar (optional, for added flavor)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 220 °C (425 °F). This ensures the sausage and vegetables roast evenly and get a nice browning.
  2. Cut the Italian sausage into approximately 5 cm long pieces. Make sure they are evenly cut for uniform cooking.
  3. Place the sausage pieces on a large baking sheet. Add the sliced bell peppers and onion wedges.
  4. Add the minced garlic, olive oil, oregano, basil, smoked paprika, red pepper flakes, salt, and pepper over the ingredients. Mix everything well to ensure the spices are evenly distributed.
  5. Spread the ingredients evenly on the sheet. Make sure they are not overlapping to allow for proper roasting. Place the sheet in the oven for about 20-25 minutes.
  6. Check the doneness after 15 minutes. The sausage should be golden brown and the vegetables soft and slightly caramelized. If necessary, stir the ingredients to ensure even browning.
  7. Remove the sheet from the oven and optionally drizzle balsamic vinegar over the dish. Let it rest for about 5 minutes before serving.
  8. Garnish with freshly chopped parsley or basil and serve warm. This dish is perfect as a main course or as part of a buffet.
