- 2 cups all-purpose flour
- 1 3/4 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries, sliced
- Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and dust them with flour to ensure the cake releases easily later.
- In a large bowl, combine the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix the dry ingredients well until evenly distributed.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix everything with a hand mixer or whisk until the batter is well combined, about 2 minutes on medium speed.
- Pour the boiling water into the batter and stir gently. The batter will be very liquid, which is normal. Ensure there are no lumps remaining.
- Evenly distribute the batter into the prepared cake pans. Bake the cakes for 30-35 minutes, until a toothpick inserted in the center comes out clean. The top should spring back lightly when pressed gently.
- After baking, let the cakes cool in the pans for 10 minutes. Then carefully remove them from the pans and let them cool completely on a wire rack.
- Place one of the cooled cake layers on a serving plate. Evenly distribute the sliced strawberries on top of the first layer, covering it well.
- Carefully place the second cake layer on top of the strawberries. This helps keep the filling in place and provides a nice presentation.
- Cover the entire cake with whipped cream or frosting of your choice. You can also add more sliced strawberries on top of the cake for decoration.
