- 250 g whole grain pasta (e.g. spaghetti or penne)
- 200 g fresh broccoli, cut into florets
- 250 g fresh mushrooms, sliced
- 2–3 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs (oregano, basil)
- Salt and pepper to taste
- 2 tablespoons nutritional yeast (optional for a cheesy flavor)
- Fresh basil for garnish
- Bring a large pot of water to a boil. Add a pinch of salt and cook the whole grain pasta al dente according to package instructions, usually about 8-10 minutes. Taste regularly to achieve the perfect bite.
- In the last 2-3 minutes of cooking, add the broccoli florets to the pasta. They should remain bright green and crisp. Drain everything and set aside.
- In a large pan, heat the olive oil over medium heat. Add the finely chopped garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the pan and sauté for about 5 minutes until they are soft and lightly browned, releasing their moisture and taking on a golden color.
- Add the cooked pasta and broccoli to the pan with the mushrooms. Sprinkle the dried Italian herbs, salt, and pepper to taste, and mix everything well. Let the dish cook for another 2-3 minutes to allow the flavors to meld.
- Optional: Sprinkle the nutritional yeast over the pasta and mix thoroughly to achieve a cheesy flavor. Remove the pan from heat once everything is well combined and aromatic.
- Serve the pasta in deep plates and garnish with fresh basil. Enjoy the delicious dish warm!
